Sitting in this square, any time of day, is pure bliss; you have a choice cafes or restaurants, a magnificent baroque cathedral, a gentle fountain and, if you're lucky, a chanteuse whose voice puts Edith Piaf to shame. She deserves every single euro she receives and then some. A coffee or glass of rose plus a copy of Nice Matin, the local daily newspaper, and you can ignore the hollering tourists and behave like a local.
